2 c. Water
2 Bananas, mashed
1 Egg
1/2 tsp. Vanilla
2 tbsp. Honey
3 c. Flour
1 1/2 tsp. Baking Soda
1/2 c. Carob Chips
Frosting:
3 tsp. Cinnamon or Carob Powder
1 tsp. Vanilla
1 tsp. Honey
12 oz. Cream Cheese (softened)
Preheat oven to 350 degrees.
Mix wet ingredients together in a large bowl. Add flour, baking soda, and carob chips. Pour into greased small muffin tins.
Bake for 15 minutes or until done.
For the frosting, combine ingredients and apply to cooled muffins. For a true "brindle" effect, you can put a layer of cinnamon frosting first, followed by a layer of carob frosting. Swirl with a toothpick.
