2007 has come and gone, and Utah Corgis officially welcomes in the 2008 new year with many happy barks and well-wishes for a successful and happy new year for all it's members!
At the starting gate of this year, the kitchen corgis offer a tasty recipe to get things "running", in honor of Cody and Trace's many accomplishments in 2007. With a belly full of these tasty cookies, they are sure to make even more accomplishments!
Cody and Trace's Preferred Cranberry-Oatmeal Cookies
1/2 c. quick oats
1/2 c. oat bran
2 c. whole wheat or oat flour
1 tsp. cinnamon
1 tsp. vanilla
1 1/4 c. water
1/2 c. dried cranberries
Mix all ingredients except the cranberries together to a stiff dough in a large bowl. Add cranberries and mix well.
Roll onto floured surface and cut into desired shapes. Bake in a 350 degree oven for 20 minutes (for small cookies) or 30 minutes (for larger cookies).
Store uneaten cookies in the refrigerator!
To keep the winter "blues" at bay, we are having not one but *two* contests in January:
First of all, we need a Utah Corgis logo! If you have artistic or graphics abilities, please put them to use and send us *your* vision of the Utah Corgis logo! We will be judging the logos at the end of the month....the winner will receive official recognition on the site as well as a fun prize for both Corgi and human(s)....enter early and enter often! Contact either Peggy or Lori.
The second contest promises to be fun as well, but details will remain covered by the crate pad of mystery for the time being.....we'll unveil that soon, so keep your eyes peeled!
