March Madness: Cardis vs. Pems!!
Our corgi (both Pem and Cardi!) fact-finders have searched long and worked hard to bring you a fun quiz to test your knowledge of the two breeds and what makes them different. The kitchen crew has also put together a special stew for the season: "Luck O'the Welsh (Corgi) Stew". This one is truly whisker-licking good!! We also have some pictures of some of our star Cardis and Pems for you to enjoy....as more come in, more will go up....(hint, hint!!)

Luck O' the Welsh (Corgi) Stew
1 cup pearled barley
1/2 cup diced carrots
1/4 cup diced celery
1/2 cup frozen chopped spinach, thawed and drained
1 cup shredded cooked chicken
3 cups low-sodium chicken broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
Heat the oil over medium-high heat in a large saucepan. Add the barley. Stir to coat with oil until lightly toasted, about 1 minute. Add the carrots, celery, spinach, and cooked chicken, stirring for 1 minute. Add chicken stock, oregano, basil, and garlic powder.
Cover and simmer for 25 minutes.
Cool to room temperature before serving.
Works well as a stand-alone dish, but is also great when ladled over kibble!
Store covered in the refigerator for up to 3 days.
